Niall McKenna's Traditional Pancakes
Ingredients (Serves 4)
- 3 eggs
- 200ml buttermilk
- 300g flour
- 1 tbsp baking soda
- 1 tbsp caster sugar
- 1 tbsp treacle
- Zest of 1 lemon
- Butter
Method
- Whisk the eggs, buttermilk, and treacle in a bowl.
- Sieve the flour, baking soda, and caster sugar, then make a well in the centre.
- Add the wet mixture to the flour mix and whisk into a smooth batter. Let it sit for 20 minutes.
- Heat a buttered frying pan and drop tablespoons of the batter onto the pan.
- Cook until bubbles form, then flip and cook for an additional minute.
- Cool on a wire rack, then serve immediately with your choice of toppings. I recommend lemon and sugar, maple syrup or chocolate sauce and vanilla ice cream.
